Preheat the oven to 180 degrees. Rub the chicken thighs with salt and pepper. In a pot, heat olive oil over high heat and place the thighs skin-side down. Fry until golden brown and transfer to a plate. Slice the chorizo and fry, stirring often, then transfer to a plate.
- Chicken thighs: 1 kg
- Salt: to taste
- Ground black pepper: to taste
- Extra virgin olive oil: 2 tablespoons
- Chorizo: 400 g

Add oregano, chopped red pepper, crushed garlic cloves, and thinly sliced onion to the pot. Sauté until golden brown. Then add rice and cook for about 3 minutes. Pour in the wine and bring to a boil. Add chicken and sausages, pour in the broth, and season with salt and pepper. Cover and bring to a boil. Place in the oven and bake for 1 hour and 10 minutes.
