Kohlrabi is a delicate gift of nature with a soft sweet taste and crunchy texture. In this French recipe, it transforms into a warm and aromatic dish infused with rich notes of chicken broth and fresh thyme. The root vegetable gently simmers in butter, revealing its natural sweetness, while the fragrant herbs add sophistication and depth. French cuisine is renowned for the elegance of simple ingredients, and kohlrabi plays a central role here – its softness harmonizes with the silkiness of butter. It makes an ideal side dish for meat or a light standalone meal that brings warmth and comfort. It's perfect for a family dinner when you crave something simple yet elegant.

Cut the kohlrabi into cubes. Place kohlrabi in a pan with 2 tbsp of oil and thyme leaves, then pour in chicken broth. Set over medium heat, season with salt and pepper, and cover with parchment paper. Cook for about 15 minutes, stirring until the cabbage is tender.
