Homemade Cabbage Rolls

Golubtsy is a traditional dish of Ukrainian cuisine with roots deep in history. Tender cabbage leaves carefully wrapped around a fragrant mixture of beef and pork mince with rice create a harmony of taste. The uniqueness of this recipe is the addition of prunes, which adds a light sweetness and spiciness, turning ordinary golubtsy into a culinary masterpiece. Stewing in sour cream sauce makes the dish especially tender and juicy, while bay leaf adds a subtle aroma. Golubtsy is a symbol of home comfort and hospitality; they can be served both on festive tables and on weekdays. The dish pairs wonderfully with rye bread, fresh vegetables, and sour cream. You will need: a duck pan and a frying pan.

Separate the cabbage into leaves without tearing them.

Boil water in a wide pot. Turn off. Place cabbage leaves in the boiling water and cover the pot with a lid. Remove the leaves after 20 minutes.
- White cabbage: 1 piece

Boil rice with salt, drain the water, and rinse the rice with cold water.
- Rice: 1 glass
- Salt: to taste

Mix the rice with the minced meat, add salt and pepper, and mix well again.
- Rice: 1 glass
- Minced pork: 250 g
- Ground beef: 250 g
- Salt: to taste
- Ground black pepper: to taste

We are preparing cabbage rolls. Take a cabbage leaf; if the stem is hard, it needs to be beaten.

Place two tablespoons of the meat and rice mixture in the center of the sheet. Fold the sheet like an envelope.
- Minced pork: 250 g
- Ground beef: 250 g
- Rice: 1 glass

The filling should not be visible from the cabbage leaf; it must be wrapped securely to ensure it doesn't spill out during cooking.

We wrap all the other cabbage rolls in the same way until the filling runs out.

Grease the pan with vegetable oil and heat it up.
- Vegetable oil: to taste

Place the cabbage rolls on a hot skillet and fry for 2 minutes on each side.

Place the fried cabbage rolls in the baking dish.

Pour cold water over the cabbage rolls so that they partially remain outside.

Cover the duck pot with a lid and bring to a boil.

Reduce the heat to low (simmer).

Add finely chopped onion and sliced carrots into thin half-rings to the duck pot.
- Onion: 1 piece

After 10 minutes, add sour cream and prunes (pitted).
- Sour cream 20%: 250 g
- Prunes: 200 g

Cook under a closed lid for 40-50 minutes.

Add bay leaf 10 minutes before cooking.
