Peel the potatoes and slice them into sticks about 3-4 mm thick using a mandoline. Place the rack in the oven at medium level and preheat to 220 degrees. Heat oil in a thick-walled pot over moderately high heat.

Add chopped onion and fry until soft for about 5 minutes. Add minced garlic and thyme, salt and pepper, and cook for another half a minute. Then add potatoes, broth, cream, and bay leaves.
