Beef salting with cabbage is a traditional Russian dish dating back to the times when salting meat was the main method of preservation. This recipe combines tender beef brisket infused with aromatic spices with soft stewed cabbage and potatoes, creating a hearty and warming meal. The salted meat acquires a rich flavor after long marination, revealing itself during cooking with garlic and onions. The cabbage, slightly soured with lemon juice, perfectly complements the juicy salted meat, balancing the richness of the dish. Place the pan over medium heat. Sauté all the spices and 3 bay leaves until fragrant. Transfer 3/4 of the mixture to a pot and add 8 cups of water, salt, sugar, and pink salt. Bring to a boil and remove from heat. Cool the mixture slightly in the refrigerator. Add the beef tenderloin to the cooled mixture, press it down with something, and keep it in the fridge for 5 days. Store the remaining spices in a sealed container.

Take the beef tenderloin, let the water drain. Place the meat with the remaining spices, garlic, and onion in a pot and cover with cold water. Bring to a boil over medium heat, then simmer on low heat for about an hour. Remove from heat and set aside.

Meanwhile, peel and cut the potatoes into large pieces. Pour water into a pot, add salt, add the potatoes and boil until cooked. Shred the cabbage and place it in the pot, add salt, lemon juice and 1/2 cup of water. Cover with a lid and bring to a boil. Simmer on low heat for about 30 minutes until the cabbage is soft. Serve the cooked potatoes and cabbage on plates. Slice the salted meat across the grain and arrange it on plates. Drizzle with meat juice and serve warm. Enjoy your meal!
