Line a baking tray with parchment paper. Wet your hands to prevent the meat from sticking, form small meatballs, and place them on the parchment.

Preheat the oven to 100 degrees. Pour olive oil into a wide pan and heat on high. Fry the meatballs. Place the fried meatballs on a baking sheet and put them in the oven.

In a medium saucepan, melt 3 tablespoons of butter over medium heat. Stir in the flour and cook, stirring for about 3 minutes. Pour in the chicken broth, bring to a boil, reduce heat and continue cooking until thickened. Add soy sauce and apple cider vinegar. Season with salt and pepper. Mix well.
