Prepare the ingredients: cut the potatoes and meat into medium-sized pieces. Peel and chop the ginger.

Dissolve the curry paste in this liquid until smooth. Then add the remaining milk, bring to a boil, and add meat, ginger, and lime leaves to the skillet. Reduce heat, cover with a lid and simmer for 1-1.5 hours (depending on the size of meat pieces) until the beef is tender.
- Coconut milk: 1 jar
- Yellow curry paste: 6 tablespoons

Add the potatoes to the pan and simmer for another 20 minutes until they are completely melting.
