Zucchini caviar in the microwave

Zucchini caviar is one of the most popular dishes in Russian cuisine, known for its delicate taste and ease of preparation. Traditionally made on the stove, the modern method using a microwave significantly speeds up the process. The caviar has a velvety texture and rich vegetable aroma, where zucchini, tomatoes, and carrots harmoniously complement each other, creating a light sourness and sweet notes. Added thyme and garlic give the dish an exquisite spiciness. It is an ideal option for a snack or side dish that can be served either chilled or warm. Canned in sterilized jars, the caviar stores well and remains a tasty addition to everyday meals.

Chop the carrot and onion into medium cubes and place them in a glass microwave-safe dish. Set for 7 minutes on maximum power.
- Carrot: 1 piece
- Onion: 1 piece

Cut the zucchini into cubes. Also cut the tomato (but first blanch it to remove the skin). Put it back in the oven for 8 minutes.
- Zucchini: 2 pieces
- Tomatoes: 1 piece

Meanwhile, heat oil in a saucepan and add garlic and a sprig of thyme. As soon as it starts to simmer, remove from heat.
- Vegetable oil: 5 tablespoon
- Garlic: 4 cloves
- Fresh thyme: 1 stem

Pour oil into the stewed vegetables. Add salt and pepper. If you think there will be too little liquid, add a little water. Then put it back in the oven for about 8-10 minutes. You will see that the vegetables will be soft. It all depends on the power of the microwave.

Next, cool this "stew" down, place it in a separate bowl, and blend it with a blender. You can also use a food processor, but the blender makes the caviar airy.
