Combine milk and sour cream in a deep pot and heat to room temperature.

Place the pot on low heat and heat while stirring constantly.

When the proteins coagulate and separate from the whey, remove the pot from the heat and strain the mixture through cheesecloth.

Well squeeze the obtained cheese, optionally add salt and spices, and cool.
