Wash the lemons and dip them in boiling water. After 5 minutes, remove and rinse with cold water. Cut each lemon lengthwise into 6 pieces.

Peel and chop the onion. Peel and slice the ginger.

Cut the meat into 6 cm cubes. Heat olive oil in a saucepan and fry the meat and onion in it.

Add sugar, ginger, and a halved pepper pod. Season with salt and pepper. Heat while stirring for 5 minutes, then add lemons and pour in vinegar.

- Ground black pepper: to taste

After 5 minutes, pour in 200 ml of water or vegetable or chicken broth and simmer on low heat for 20 minutes. Add dried apricots and raisins. Cook uncovered for another 10 minutes to thicken the sauce.
