Cut the chicken fillet into small pieces. Add spices to taste: curry, ginger, and a little nutmeg. Salt and add one tablespoon of rice vinegar. Mix everything well and place it in a pan greased with vegetable oil. Fry the chicken over medium heat, stirring occasionally.
- Chicken fillet: 500 g
- Curry: to taste
- Ground nutmeg: to taste

While the chicken is frying, slice the eggplant (sprinkle with salt, and you can also peel it in advance), tomatoes, pepper, and apple. When everything is sliced, the chicken should be white on all sides. All the chopped vegetables are placed on top of the chicken in the pan.

Everything is mixed and simmered over medium heat for another 15-20 minutes, until the chicken is cooked and the vegetables release their juice.
