We take the fish (I have perch): if the fish is fresh, we gut it along with the gills, if it's frozen, we thaw it and then do the same.
- River fish: 2 pieces

Add salt to the inside of the belly to taste.

Then we place the sliced onions in half rings there and pour mayonnaise over the onions.
