Mexican Style Pork Ribs

Mexican-style pork ribs are a feast of flavor inspired by Latin American culinary traditions. The secret to their unique aroma lies in a rich marinade that combines the heat of dried chili peppers with spicy notes of oregano, cinnamon, and cloves, along with the freshness of orange juice and white wine vinegar. Place the prepared pork ribs in a deep baking dish or a large bowl. Pour four cups of hot water over the chili peppers, cleaned of seeds and tough stems, and let them sit for eight to ten minutes, then drain and dry, saving about half a cup of the soaking water.
- Pork ribs: 3 kg
- Dried chili peppers: 16 pieces
- White wine vinegar: 100 ml
- Orange juice: 200 ml

In a food processor bowl, mix softened chilies with oregano, cinnamon, cloves, vinegar, orange juice, vegetable oil, slightly crushed garlic, parsley, salt and pepper to taste. Then add the water in which the chilies were soaked. Blend until smooth and pour the resulting marinade over the ribs. Cover the container with plastic wrap (or a tightly fitting lid) and refrigerate overnight or for at least four hours.
- Dried oregano: 1.5 tablespoon
- Ground cinnamon: 2 teaspoons
- Ground cloves: 0.3 teaspoon
- White wine vinegar: 100 ml
- Orange juice: 200 ml
- Vegetable oil: 50 ml
- Garlic: 16 cloves
- Parsley: 6 stems
- Salt: to taste
- Ground black pepper: to taste

Preheat the grill. Remove the ribs from the marinade and grill for thirty to thirty-five minutes, turning occasionally, until a rich dark crust forms on both sides.

Remove the cooked pork ribs from the grill and let them rest for fifteen to twenty minutes to cool slightly before serving.
