Wash the chicken, remove the skin (if desired), cut into portions.

Prepare the marinade: wine, soy sauce, honey, garlic, ginger, citrus juice and zest, peppers (not packaged but freshly ground).
- Dry white wine: 0.5 glass
- Soy sauce: 0.5 glass
- Garlic: 5 clove
- Liquid honey: 3 tablespoons
- Grated ginger: 1 tablespoon
- Lemon: 1 piece
- Oranges: 1 piece
- Salt: to taste
- Ground black pepper: to taste

Thoroughly mix the chicken with the marinade and leave it in the refrigerator for an hour (longer is fine).

Drain the marinade and strain it.

Add 1 tsp of salt, bring to a boil, reduce heat, and simmer until reduced by half. Fry the chicken in vegetable oil until golden brown.
