Chicken zrazy with cottage cheese and spinach is a delicate and aromatic dish of Russian cuisine that combines simplicity and exquisite taste. The history of zrazy traces back to ancient Russian cooking, where stuffed cutlets symbolized home comfort and hospitality. In this recipe, juicy chicken fillet is harmoniously complemented by the softness of low-fat cottage cheese and the freshness of spinach, while garlic and spices add piquant notes. The dish is light yet nutritious, suitable for healthy eating and can be prepared in various ways — in a pan, oven or steamer. Chicken zrazy pairs perfectly with vegetable side dishes and sauces, and their tender filling unfolds pleasantly with each bite. These cutlets make an excellent choice for a family dinner or festive table.

1
Finely chop the fillet (or make minced meat). Grate the onion or chop it very finely. Combine the meat, egg, onion, bran, salt, and pepper, and mix thoroughly; if it's too runny and the patties don't hold together, you can add another spoon or two of bran.
- Chicken fillet: 700 g
- Onion: 1 piece
- Chicken egg: 1 piece
- Oat bran: 3 tablespoons
- Salt: to taste
- Ground black pepper: to taste
2
If the spinach is frozen, it needs to be thawed and squeezed; if fresh, it should be sautéed in a pan. Mash the cottage cheese and spinach together with a fork, add garlic to the mixture, salt to taste, and mix. Shape patties with filling and fry in a small amount of oil or bake in the oven on parchment paper (without oil). It can also be cooked in a steamer.
