Pushkin-style chicken cutlets

Pushkin-style chicken cutlets are a refined dish of Russian cuisine inspired by the traditions of home cooking. Its name refers to the era of Pushkin when simple yet sophisticated flavors were appreciated. Tender minced chicken fillet enriched with fresh herbs gains juiciness and richness from frying in hot pan with pork fat. Chop the chicken fillet in a coarse grinder. Chop the greens with a knife, mix with the minced meat, and season with salt and pepper to taste. Slightly beat the minced meat.
- Chicken fillet: 700 g
- Green: 3 bunchs
- Salt: to taste
- Ground black pepper: to taste

Form 4 flat patties the size of a palm, fry in a hot (preferably cast iron) skillet, lightly greasing it with fat.
- Lard: 10 g

Fry on each side for 5 minutes without a lid on high heat, then on low heat with a lid for another 10 minutes on each side.

Serve with fresh vegetables or vegetable salsa; finely dice tomato, sweet pepper, kiwi or peach, red onion, and your favorite herbs. Dress everything with olive oil + a bit of ketchup.
