Chicken with vegetables in puff pastry envelopes is a dish that combines tender meat, crispy dough, and aromatic vegetables. We prepare the filling (can be done an hour before cooking or prepared the night before and left in the fridge): cut chicken fillet into cubes, grate the carrot, chop the onion and mix everything with spices, salt, pepper, and apple cider vinegar.
- Chicken fillet: 400 g
- Carrot: 1 piece
- Onion: 3 pieces
- Apple cider vinegar: 1 tablespoon
- Poultry Spice Mix: to taste
- Salt: to taste

Roll out the puff pastry (the sheet should be rolled in one direction) to obtain a long rectangular strip, which we cut into 8 squares (resulting in 16 squares from two sheets of dough).

Place the filling on the dough and pinch it into an envelope shape. Arrange the finished envelopes on a greased pan or baking sheet and bake in the oven. After about 25-30 minutes, the dish is ready.
