75 minutes

Pork rolls with mushrooms and cheese are an exquisite dish of Russian cuisine that embodies the rich traditions of taste and texture. The history of this dish traces back to ancient Russian feasts where meat was combined with aromatic fillings to create a harmony of flavors. Tender pieces of pork envelop a juicy filling of mushrooms, onions, and cheese, complemented by cream for added softness. The golden crust when fried releases an appetizing aroma, while baking perfects the dish. Pork rolls pair perfectly with sides of potatoes, rice or vegetables, adorning the festive table and delighting guests with their rich flavor. Their simplicity in preparation makes them an excellent choice for home entertaining while the rich filling turns them into a true gastronomic masterpiece.

Cooking steps
  • 1

First, we will prepare the filling from mushrooms and onions. For this, heat a pan with 2-3 tablespoons of sunflower oil over medium heat. Clean the onion and cut it into 1/4 circles, frying until golden brown. Don't forget to stir occasionally.

    Required ingredients:
    1. Sunflower oil30 ml
    2. Onion1 piece
  • 2

Wash and clean the mushrooms, then cut them into cubes. When the onion is ready, add the chopped mushrooms to the pan. Fry everything together for another 10-15 minutes, stirring occasionally. The mushrooms will shrink and release juice - once it evaporates, you can remove the pan from the heat.

    Required ingredients:
    1. Champignons500 g

Pour the contents of the pan into a bowl. Peel the boiled eggs, chop them, and add them here. Grate the cheese on a coarse grater and add it. Mix everything well, add salt and black pepper to taste. The filling is ready.

    Required ingredients:
    1. Chicken egg2 pieces
    2. Hard cheese150 g
    3. Salt to taste
    4. Ground black pepper to taste

Now let's prepare the meat. Cut the pork into pieces slightly less than 1 cm thick. Salt each piece on both sides and pound it with a meat mallet so that it is thin enough and large enough to wrap the filling.

    Required ingredients:
    1. Pork700 g
    2. Salt to taste
  • 5

Place two tablespoons of filling on one end of the meat piece. Fold the meat and roll it up. Secure with toothpicks or thread.

  • 6

Heat a pan with sunflower oil over medium heat. Fry the meat rolls on all sides until golden brown, starting with the side where the seam is. Once this side is cooked enough, you can remove the toothpicks — the roll is secured.

  • 7

Transfer the prepared rolls from the pan to a baking dish. Add about 1.5 cups of water. Pour cream over the rolls. Sprinkle with black pepper and salt. Place in a preheated oven. Bake at 180 degrees for about 30 minutes. Serve hot as a main dish with a side of your choice.

    Required ingredients:
    1. Cream1 glass
    2. Salt to taste
    3. Ground black pepper to taste
