Balibey Burger

Balibey is one of the characters in the Turkish TV series "The Magnificent Century". Just as impressive as this lamb burger. Recipe by Oleg Petrichenko, chef of the Cheapside burger bistro

Pass the lamb and then beef fat once through a coarse meat grinder, mix the minced meat, beat it well, and send it to the refrigerator for half an hour.
- Lamb (back): 280 g
- Beef fat: 120 g

For the sauce, bake a medium-sized tomato and sweet pepper in the oven at 200 degrees for fifteen to twenty minutes. (You need 40 grams of each, but it's easier to bake them whole.) Meanwhile, sauté chopped onion in half a tablespoon of oil. Peel the tomato and pepper and blend them with the fried onion.
- Tomatoes: 320 g
- Red sweet pepper: 40 g
- Onion: 25 g
- Vegetable oil: 1.5 tablespoon

Grate the cheese and mix it with mayonnaise and paprika paste. Cut the potatoes into thin strips using a mandoline and fry them in hot oil.
- Fol-epi cheese: 50 g
- Mayonnaise: 40 g
- Paprika paste: 8 g
- Potato: 100 g
- Deep frying oil: 300 ml

Make patties from minced meat. Fry in vegetable oil for two and a half minutes, then flip, season with salt and pepper, and place cheese mixture on the fried side. Fry the other side for the same amount of time.
- Vegetable oil: 1.5 tablespoon
- Salt: to taste
- Ground black pepper: to taste

Cut the buns in half. Spread sauce, lettuce leaves, and patties with cheese sauce on the bottom halves. Add rings of red onion, remaining tomatoes, and cilantro. Cover with the other halves. Serve the fries separately.
- Hamburger bun: 4 pieces
- Lettuce: 40 g
- Red onion: 40 g
- Fresh cilantro (coriander): 10 g
