Vegetable draniki are a bright and aromatic version of classic Belarusian potato pancakes. Their history dates back to ancient village traditions when simple and accessible ingredients were transformed into tasty and hearty dishes. The addition of carrots and sweet peppers gives the draniki a rich color and a slight sweetness, while the crispy crust makes them particularly appetizing. They pair perfectly with sour cream, garlic sauce, or fresh herbs, and can also serve as a side dish for meat dishes. Easy to prepare, these draniki make an excellent option for breakfast or a cozy family dinner.
