Chop the onion finely. Grate the carrot on a medium grater. Break the cauliflower into florets. Shred the white cabbage. Cut the zucchini into cubes. Remove seeds from the pepper and cut into cubes. Cut the tomatoes into cubes. Chop the greens finely.

Fry the onion in vegetable oil. Add the carrot and sauté lightly. Add the vegetables (all except tomatoes or tomato paste) and simmer for about 10 minutes (no water needed).
