Remove the zest from the orange with a sharp knife, without the white pith, and cut into strips.
- Orange zest: 20 pieces

Remove thyme leaves from the stems, mix with sunflower oil and pepper. Dip the fish steaks in the mixture.
- Fresh thyme: 6 stems

Fold a foil into an envelope for fish, place strips of zest (6-8 strips per steak) on the 'bottom'. Place the steak on the zest, drizzle with oil, and close the envelope.
