Gomel cutlet is a true culinary masterpiece of Belarusian cuisine. Its history is closely linked to traditional methods of preparing meat dishes, where heartiness and flavor richness have always been in focus. This cutlet features tender pork fillet complemented by a fragrant filling of mushrooms, onions, carrots, and hard cheese, giving the dish an appetizing juiciness. Prepare the filling: chop mushrooms, onion, and carrot and sauté in vegetable oil. Add salt, pepper, and herbs. Transfer to a bowl. Grate cheese coarsely into it. Mix well. The filling is ready.
- Fresh mushrooms: 300 g
- Onion: 1 head
- Carrot: 1 piece
- Vegetable oil: to taste
- Salt: to taste
- Ground black pepper: to taste
- Green: to taste
- Hard cheese: 150 g

Cut the pork steak into portions, thinly pound each piece on both sides, season with salt and pepper. Place the filling on the pounded meat and shape into oval patties.
- Pork fillet: 600 g

When all the cutlets are formed and waiting for their fate, only then do we grate the potatoes on a coarse grater — if grated earlier, the potatoes will darken and the cutlet will look unappetizing.
- Potato: 3 pieces

First, coat the patty in flour, then in egg, and then, with your hands shaped like a 'boat', evenly spread the grated potato over the patty, pressing it down with your hands.
- Wheat flour: 0.5 glass
- Chicken egg: 2 pieces

Heat the pan well, then pour in the oil and heat it up as well. This is necessary so that the potato 'coat' doesn't fall off while frying and doesn't stick to the pan. If done correctly, the potato 'coat' will stay in place, and the cutlet will be even and beautiful.

Fry the patties until golden brown over medium heat.
