Beef Tenderloin Fajitas

Fajitas made from beef tenderloin is one of the most colorful representatives of Mexican cuisine, embodying its spirit and passion. Historically, the dish originated among Mexican cowboys who cooked meat on hot pans and wrapped it in tortillas. Today, fajitas are a symbol of warm family dinners and parties. Tender beef, carefully seasoned with salt and pepper, is first boiled and then sliced into strips. Combined with sautéed onions, sweet bell peppers, and spicy chili peppers, it acquires a rich, slightly spicy flavor with smoky notes. Served with warm tortillas, sour cream, cheese, and guacamole allows everyone to create their perfect combination. It's not just a dish—it's a culinary ritual where everyone assembles their ideal fajitas.

Rinse the beef tenderloin well, remove membranes and excess. Cut into thick steaks. Salt well and sprinkle with black pepper, then massage the salt and pepper into the meat. Place the meat in a pot of boiling water with allspice and black peppercorns and boil on high heat for 15-20 minutes.
- Beef tenderloin: 500 g
- Black allspice: 5 piece
- Bay leaf: 4 pieces

Then either pour out the broth or use it for soup. Let the meat rest and cool at room temperature. When the meat cools to a temperature that won't burn your hands, slice it into strips 8–10 cm long and 1 cm wide/thick along the grain.
- Beef tenderloin: 500 g

Slice the onion into half rings, and cut the bell and hot peppers into strips.
- Sweet red onion: 3 pieces

If you wish, you can bake tortillas yourself, but I use store-bought ones — heating them in the microwave beforehand.

In a hot (preferably cast iron) skillet, greased with fat or lard, place the beef so that it covers the skillet in a single layer. Then generously sprinkle with freshly ground pepper and fry for 5 minutes, stirring well.

Then add onion and pepper, mix thoroughly in the pan, and remove the pan from the heat.

Now only the serving is left. Fajitas are usually served right on the skillet with tortillas separately. Take a tortilla in your hand, fill it with meat and vegetables, sprinkle with grated cheese, sour cream, guacamole, and salsa to taste — and... enjoy your meal!
