Finely chop the onion and dried apricots. A food processor can be used, but be careful not to overdo the intensity — the result should be finely chopped, not pureed onion and apricots.

Heat a little olive oil in a pan over low heat and lightly sauté the onion and dried apricots, stirring constantly. This should be done for about five to seven minutes. The onion must not burn at all.
