Pork rolls with mushrooms are a refined dish of Ukrainian cuisine that combines the juiciness of meat with the tenderness of the mushroom filling. Its recipe roots trace back to home cooking traditions, where meat rolls often adorned festive tables. The dish has a rich flavor: the aroma of fried champignons harmoniously complements the delicate creamy sauce and stretchy mozzarella. The rolls are perfect for a cozy family dinner or a festive feast and can be served with mashed potatoes or fresh vegetables. The secret to success is properly beaten pork and carefully prepared filling, making each piece melt in your mouth.

1
Heat 2-3 tablespoons of vegetable oil in a pan over medium heat. Peel the onion and cut it into thin quarter rings. Fry in the pan until golden brown (about 10 minutes), stirring.
- Vegetable oil: 3 tablespoons
- Onion: 2 heads
2
Wash, clean, and cut the mushrooms into small pieces, add them to the pan with onions and cook for another 10-15 minutes, stirring occasionally.
- Champignons: 400 g
3
Place the cooked mushrooms in a bowl, add chopped eggs and grated cheese. Mix everything well, season with salt and ground pepper to taste.
- Chicken egg: 2 pieces
- Mozzarella cheese: 250 g
- Salt: to taste
- Ground black pepper: to taste
4
Cut the pork across the grain into pieces about 7-8 mm thick. Season with salt and pepper on both sides and pound with a kitchen mallet to make the pieces thin and large enough for wrapping the filling.
- Pork fillet: 600 g
- Salt: to taste
- Ground black pepper: to taste
5
Place about 2 tablespoons of filling on each piece of pork and roll the pork into a roll. Secure with toothpicks or wrap with string.
- Mozzarella cheese: 250 g
- Chicken egg: 2 pieces
6
Heat a large skillet with oil over medium heat. Sear the pork rolls on all sides, starting with the side seam. After searing the seam, you can remove the toothpicks (if you used string, it can be removed later).
- Vegetable oil: 3 tablespoons
7
Place the fried rolls in a baking dish (if you used thread, remove it). Pour about 1.5 cups of water and cream into the dish. Season with black pepper and salt, and place in a preheated oven at 190 degrees.
- Cream 35%: 1 glass
- Salt: to taste
- Ground black pepper: to taste
8
Bake for 30 minutes or until golden brown. Serve warm.
