Juicy Chicken Tabaka in the Sleeve

Chicken Tabaka is one of the most famous dishes of Georgian cuisine, with a history that dates back to ancient times. Originally cooked over an open flame under a heavy press, the modern recipe has been adapted for convenience: it is baked in a sleeve, preserving all its juiciness and aroma. The crispy golden crust hides tender meat infused with the rich aroma of garlic and spices. The secret to its flavor lies in the careful preparation of the chicken, which is pricked with a fork to allow the spices to penetrate deeper. This dish pairs perfectly with fresh vegetables, cilantro, and spicy sauces, adding a Georgian flair to the meal. Served hot straight from the oven, it is a true delight for lovers of juicy roasted meat.
