Chicken drumsticks, French style
2 servings
70 minutes
French-inspired chicken drumsticks are a refined and aromatic dish inspired by French culinary tradition. Tender chicken drumsticks are slowly braised in butter with onions, paprika, and white vermouth, giving them a special depth of flavor. The addition of lemon juice brings a pleasant acidity, while herbs add fresh notes to the composition. The sauce made from sour cream and egg yolks makes the dish velvety and rich. This treat is perfect for a cozy family dinner or a festive table. It is served hot, surrounded by favorite side dishes—from mashed potatoes to fresh baguette that absorbs every drop of the delicate sauce.

In a pot, melt the butter and fry the chicken for a couple of minutes, then add finely chopped onion, salt, pepper, paprika, and vermouth. Tear the herbs by hand and add them to the chicken. Squeeze the juice from half a lemon (2 tablespoons) into a separate bowl. Place the lemon half in the pot with the chicken. Pour in water and simmer for at least 40 minutes. During this time, about 2/3 of the liquid will evaporate.
