Hedgehogs will be a great second course for lunch, and will please your family and friends. Voila, and our meat hedgehogs are ready. Unfortunately, today, I did not keep an eye on the rice and it was slightly overcooked, and the result is obvious - the long-awaited needles do not stick out. So, when boiling rice, do not overcook it under any circumstances. And it is best to add uncooked, but washed rice. Serve the plate with a side dish and serve the hedgehogs to the table with vegetables. The dish turns out very tasty, satisfying and economical, and most importantly - everyone likes it, especially children. Meat hedgehogs are a pleasure to cook. Be sure to try them.

Rice should be rinsed well until the water is clear and boiled until half-cooked. Drain the boiled rice in a colander and rinse well in cold running water (rinsing is optional), then wait for it to cool and drain.
- Rice: 1 glass

In a bowl, combine all prepared ingredients - rice with minced meat, salt, pepper, add an egg, finely chopped onion. Mix everything well to avoid lumps.

Form balls of the desired size from the prepared minced meat and place them in a greased baking tray.

For the sauce, mix sour cream with tomato paste in a bowl, add salt, pepper, and optionally dried basil. Add 150 milliliters of boiled water, mix well, and evenly pour the sauce over the meatballs.
- Sour cream: 200 g
- Tomato paste: 1 tablespoon

Place the baking tray in a preheated oven at 180–200 degrees and bake for 40 minutes.
