Salmon croquettes are an exquisite dish of French cuisine that combines the tenderness of fish with the crispy texture of breading. This recipe originates from the traditions of French gastronomy, where the art of transforming simple ingredients into refined pleasure is at the heart of cooking. The flavor of the croquettes is rich and balanced: tender salmon infused with white wine aroma harmonizes with the light acidity of lemon juice and subtle spice notes. Fried to a golden crust, they acquire an appetizing crunchiness, making each bite a true delight. Croquettes are perfect for a festive dinner, a formal reception, or simply for gastronomic enjoyment in a cozy home atmosphere. They can be served with tartar sauce, fresh vegetables or a light salad to complement the richness of flavors and highlight the dish's sophistication.

1
Mix 4 cups of water, wine, 2 teaspoons of fish seasoning, and 1 tablespoon of salt in a deep skillet. Bring to a boil over high heat. Add the salmon fillet skin-side down, turn off the heat, cover, and let the salmon sit for 10 minutes. Carefully remove the fillet from the marinade with a spatula and place it on a plate skin-side up. Allow the fillet to cool (the salmon should remain uncooked in the middle).
- Dry white wine: 0.5 glass
- Seasoning for fish: 3 teaspoons
- Salt: 2 g
- Salmon fillet: 500 g
2
Remove the skin from the salmon fillet. Break the fillet into small pieces, checking for bones. Add the remaining spices, salt to taste, breadcrumbs, butter, chopped green onion, chopped onion, eggs, and lemon juice. Mix the ingredients and refrigerate for 0.5 hours.
- Salt: 2 g
- Seasoning for fish: 3 teaspoons
- Breadcrumbs: 0.5 glass
- Butter: 50 g
- Green chopped onions: 4 teaspoons
- Yellow onion: 1 head
- Chicken egg: 2 pieces
- Lemon juice: 75 ml
3
Form small balls from the minced meat (the amount is approximately for 12 pieces). Place them on a board or any flat surface to refrigerate the preparations for another hour or overnight.
4
Heat oil in a pan for frying croquettes, and fry the croquettes until cooked and golden-brown, about 5-7 minutes. Place the croquettes on a paper towel to remove excess oil.
