Hedgehogs made of minced meat and rice with an egg filling are a comforting dish of Russian cuisine that combines simplicity and rich flavor. The origins of the recipe trace back to home cooking traditions where it was important to create a hearty and appetizing dish from available ingredients. Tender meat hedgehogs with airy egg filling provide a rich taste thanks to the harmonious combination of minced meat, aromatic onions, and fresh herbs. The enveloping tomato-sour cream sauce adds spiciness and juiciness, making them perfect for serving with a side dish or fresh vegetables. This dish delights not only in taste but also in appearance — the soft rice 'spikes' give the hedgehogs a charming texture reminiscent of cozy home-cooked meals that warm the soul.
