Achma with suluguni is a true Georgian gastronomic treasure that dates back to ancient traditions of baking unleavened dough. Unlike traditional pies, achma is prepared in layers, each soaked in butter and generously sprinkled with aromatic suluguni—a tender, salty cheese that melts perfectly when baked. The finished dish delights with its rich creamy-cheese flavor, light flaky texture, and golden crispy crust. Achma is perfect for festive gatherings as well as cozy family dinners, becoming the main highlight on the table. It is served hot, and its stretchy cheese and delicate dough layers make every guest want a second helping.

Fill the pot with water, add salt, and place it on medium heat.
- Water: 300 ml

Beat the eggs lightly, add water and salt.

Then carefully add the sifted flour and knead the dough.
- Wheat flour: 1 kg

We divide the dough into 7 parts (two of them are larger than the others).

Shape each piece into a ball and place the dough in the refrigerator for 10 minutes.

Then roll out the dough - it should be thin layers, the base layer should be larger.

Grate the cheese on a coarse grater.
- Suluguni cheese: 1.5 kg

We melt the butter over low heat.
- Butter: 270 g

Take a 35 cm mold, line it with baking paper, grease it, add the first layer (the edges should extend beyond the mold), grease it, and sprinkle cheese to cover the entire surface.

The remaining 5 layers need to be cooked. Each layer is dipped in boiling salted water for 20 seconds, then removed and placed in cold water, and then the layer should be placed on a towel to dry.

Then layer the prepared dough in the mold. Grease each layer and sprinkle with cheese.

Then we cover the form with the last layer, fold the edges of the base layer, and brush with oil and beaten egg.
