Duck breast in orange sauce

An excellent and very simple recipe that will decorate your table.

Let's start with the orange sauce. Squeeze the juice from 4 oranges and mix it in a deep pan (at least 9 cm deep) with chicken broth, sugar, and orange zest. Bring the mixture to a boil, then reduce the heat and simmer for about 30 minutes until thickened.

We take the duck breast, salt and pepper it. We place it on the fire and heat the pan. No oil is needed for frying! We put the duck breast in the hot pan, skin side down. Fry for 12 minutes. The fillet will be medium rare; if you like it well done, fry for an additional 5 minutes.

Flip and fry for another 10 minutes. Drain the resulting duck fat.
