Remove the skin from 1 kg of pork, rub it with salt, and marinate it for a week. Then, take it out, squeeze it, stuff it with 10 cloves and cinnamon, and roast it in the oven, first basting with water and then with the juice released by the pork. About half an hour before it's done, sprinkle with grated black bread and crushed lemon zest (1/4 tablespoon) and let it finish cooking without basting with juice.
