Preheat the oven to 220 degrees. Grease 2 fireproof pans with vegetable oil.
- Vegetable oil: to taste

In a small bowl, mix ginger, soy sauce, lime juice, olive oil, and a little black pepper.
- Grated ginger: 2 tablespoons
- Soy sauce: 2 tablespoons
- Lime juice: 5 tablespoon
- Extra virgin olive oil: 2 tablespoons
- Freshly ground black pepper: to taste

Cut the dark green leaves and roots of the leek. Then slice into small circles and wash well. Cut the tomatoes into small wedges.

In one pan, place the leek and tomatoes, in another - the fish fillet. Brush the vegetables and fish with ginger marinade, season with salt and pepper. Send both pans to the oven for 10 minutes.

Mix the vegetables and brush with the marinade again. Return to the oven with the fish for another 2-4 minutes until the fish is done.
