Wash the chicken well and dry it. Cut the lemons into 4 pieces. Remove the core from the fennel and slice it into small pieces.
- Chicken: 1800 g
- Lemon: 2 pieces
- Fennel: 1.2 kg

Rub the chicken with salt and pepper and place it on a baking sheet, putting 2 lemon quarters inside. Tie the legs with string. Arrange the remaining lemon and fennel around it. Drizzle with olive oil and mix.
