Mititei on the grill is a gem of Moldovan cuisine, infused with the spirit of Balkan traditions. These juicy meat sausages made from beef fillet with aromatic garlic and spices have a rich flavor with a slight spiciness of fresh pepper. Their secret lies in the special treatment of the minced meat and prolonged aging, which gives tenderness and juiciness to each piece. Mititei are prepared on the grill, a traditional Moldovan barbecue smeared with lard, giving them an appetizing crust and rich aroma. They are served with pickles, tomatoes, and herbs, and can be additionally drizzled with mujdei sauce. This dish is not just nutritious; it carries the atmosphere of cozy family evenings and warm Moldovan hospitality.

Wash the meat, cut it, and pass it through a meat grinder.
- Beef fillet: 600 g
- Garlic: 0.5 clove

Add salt, red ground pepper, baking soda, grated garlic, broth, and mix everything. Whip the mixture and let it chill for 6-8 hours.
- Salt: to taste
- Fresh pepper: 20 g
- Soda: 1 teaspoon
- Garlic: 0.5 clove
- Bouillon: 2 tablespoons

Remove the grid knife from the manual meat grinder, attach the special nozzle - sausage tube, and use it to form sausages 10-12 cm long from the prepared minced meat.

Grill them on a greased grill. If there is no grill at home, you can fry them in a pan with heated fat.

Serve the meatballs 2 pieces per portion, garnished with pickled cucumbers or fresh tomatoes, and green peas. When serving, drizzle with mujdey sauce and sprinkle with herbs.
