Rinse the chicken fillet, remove all excess (since it has a small muscle, I also cut along the large muscle, but not all the way through), salt the breast and pepper it.
- Chicken breast fillet: 4 pieces
- Salt: to taste
- Ground black pepper: to taste

Place cheese cut into wide strips in the sliced part and the existing part. Wrap the breast with bacon, not too tightly but enough to hold it together, securing with toothpicks to keep the cheese inside (I let it stick out a bit for a nicer look when melted), add thyme and rosemary as preferred.
- Mozzarella cheese: 600 g
- Bacon: 4 pieces
- Thyme leaves: to taste
- Rosemary: 1 piece

Preheat the oven to 200 degrees.

Grease the baking tray or heatproof dish with olive oil and place the chicken breasts.
