Tabaka chicken is a fragrant and appetizing dish from the Caucasus that has captivated European cuisine with its juiciness and rich flavor. Traditionally, the chicken is cooked under a weight, making its meat incredibly tender and its skin golden and crispy. Spices, garlic, and farm sour cream add zest and creamy tenderness to it. This dish pairs wonderfully with fresh vegetables, herbs, or spicy sauces. It is perfect for both festive gatherings and cozy family dinners, evoking memories of warm home cooking traditions.
