Clean the dorado fish from its entrails, leaving the head and tail in place.

Evenly spread 500 grams of salt on a baking sheet. Place lemon slices over the entire surface of the salt.

Insert a slice of lemon under the fish's gills. Place the fish on a baking sheet (right on the lemon slices). You can add a couple of thin lemon slices on top. Rosemary leaves can be added to taste.

Place in the oven for 50 minutes at a temperature of 125-130 degrees with top and bottom heat.
