In a small bowl, mix ginger, salt, pepper, and red pepper flakes.
- Ground ginger: 2 tablespoons
- Salt: 1 teaspoon
- Ground black pepper: 1 teaspoon
- Red pepper flakes: 0.5 teaspoon

Rinse the ribs well under cold water and dry them. Cut the limes in half and rub the juice on the ribs on both sides. Rub the ribs with the ginger mixture, wrap in film or a bag, and refrigerate for 8 hours. Remove from the refrigerator and let sit at room temperature for 30 minutes.

Preheat the grill or barbecue.

Place the ribs on the grill and cook for 40 minutes. Then brush the ribs with sauce and cook for another 30 minutes, occasionally basting with sauce. Transfer the ribs to a plate, cover with foil, and let rest for 10 minutes. Slice and serve with the remaining sauce.
