Pound the chicken breasts between 2 pieces of plastic wrap until thin. Sprinkle with 0.25 teaspoon of salt.
- Chicken breast fillet: 4 pieces
- Salt: 0.3 teaspoon

In a small bowl, mix olive oil, lemon juice and zest, minced garlic, finely chopped tarragon, and the remaining salt. Mix well.
- Extra virgin olive oil: 2 tablespoons
- Lemon juice: 2 tablespoons
- Lemon zest: 1 teaspoon
- Garlic: 1 clove
- Tarragon leaves: 2 teaspoons
- Salt: 0.3 teaspoon

Preheat the grill or barbecue. Grease the grate with oil. Place the chicken and brush with lemon oil. Grill for 2 minutes, flip, brush again, and grill for another 2 minutes until cooked. Transfer to plates and serve.
