Preheat the oven to 230 degrees. Line a baking sheet with a large sheet of foil, leaving long edges. Do the same with the second baking sheet.

Place the cleaned, washed, and dried fish on each sheet of foil. Generously rub with salt and pepper on all sides.
- Salmon: 2 pieces
- Salt: to taste
- Ground black pepper: to taste

In a small bowl, mix finely chopped green onions, thinly sliced fresh ginger, soy sauce, peanut and sesame oil, and sugar. Place the mixture on top of the fish. Wrap tightly in foil and bake for about 20-25 minutes, depending on the size of the fish (usually about 10 minutes for every 2.5 cm thickness of the fish). Remove from foil and serve drizzled with juices.
