Pike perch with pink pepper is an exquisite dish of Italian cuisine that harmoniously combines the tenderness of fish and the spiciness of the sauce. This dish may be inspired by Mediterranean traditions, where fresh seafood is complemented by vibrant aromas of herbs and spices. A light citrus note of lime, the sharpness of pickled ginger, and the freshness of cilantro create a rich flavor profile that highlights the natural taste of pike perch. The crispy crust formed during frying adds textural pleasure, while a side of green beans makes the dish not only tasty but also nutritionally balanced. Perfect for a romantic dinner or a special family gathering where one wants to enjoy refined flavors and the atmosphere of the Mediterranean.

First, prepare the sauce with pink pepper. For this, mix 4 tablespoons of olive oil, lime juice, finely chopped pickled ginger, cilantro leaves, finely chopped lemon grass, and pink pepper in a bowl. Pour the mixture into a sauceboat.

We rinse the pike perch fillet under cold running water and remove excess moisture by patting the fish dry with a paper towel. We rub both sides of the fillet with sea salt and place it skin-side down in a pan with heated olive oil.

- Sea salt: to taste
- Olive oil: 6 tablespoons

Using a spatula, press the fish against the hot pan and fry for about a minute until the skin becomes crispy. Then reduce the heat, flip the fillet, and cook for another 8 minutes.

Place the fillet on a plate, drizzle with sauce, and serve with diagonally cut steamed beans.
