Prepare the necessary ingredients.

Pour 2 liters of water into a separate container, bring to a boil, add 100 grams of salt, 1 head of garlic, 5 bay leaves, 10 allspice berries, 10 black peppercorns, ground coriander to taste, and boil the spices for about 5-7 minutes with the lid on. Cool to room temperature without removing the lid.

Soak the duck in cold water for 1.5 hours.
- Duck: 2 kg

Drain the water from the duck. Wash the duck well, remove all excess.

Soak the duck in cooled brine for about 8-10 hours. Leave it to marinate in a cool place.

Before taking the duck out of the brine, wash the apples well, cut them into four pieces, and remove the core.

Place the duck and remaining apples in a roasting bag, tie the ends of the bag, and make a few holes on top with a toothpick. Put the duck in the bag on a baking tray and send it to the oven preheated to 180 degrees.
