Goose in the oven

A simple and dearly loved recipe, in which the goose is first marinated in orange juice with oriental spices, and then baked in the oven. Pay attention to the foil - it will add juiciness to the goose.

Prepare all the ingredients.

Grind black pepper and star anise in a mortar or coffee grinder.
- Anise (star anise): 2 pieces
- Black peppercorns: 2 teaspoons

Grate the ginger root on a fine grater.
- Ginger: 40 g

Mix ground spices, salt, ginger, crushed garlic through a press, and orange zest into a uniform paste. Add a little vegetable oil if necessary.
- Salt: 15 g
- Ginger: 40 g
- Garlic: 5 clove
- Oranges: 2 pieces
- Ground cinnamon: 1 teaspoon
- Black peppercorns: 2 teaspoons

Rub the goose with spicy paste inside and out.
- Goose: 3 kg

Wrap the goose in food film and marinate in the refrigerator for 8 hours.

Preheat the oven to 180 degrees. Remove the goose from the wrapping, place it in a deep baking tray, cover with foil, and put it in the oven for 2 hours.

Extract juice from oranges and reduce it with sugar by half in a small saucepan.
- Oranges: 2 pieces
- Sugar: 15 g

Remove the foil from the baking tray, brush the goose with orange juice, and roast for another hour, periodically basting it with juice or rendered fat from the tray.
