Fried rice with egg and green onions is a simple yet elegant dish that combines the tenderness of basmati, the fluffiness of beaten eggs, and the aroma of fresh green onions. Although this recipe is often associated with Asian cuisine, in European traditions it has acquired a milder and more balanced flavor, perfect for everyday meals. The ease of preparation makes it an excellent choice for quick dinners as well as refined sides to main dishes. The fried rice develops an appetizing golden crust, while soy sauce adds savory notes. This recipe stands well on its own but can easily be adapted by adding other ingredients like vegetables or chicken to turn it into a complete meal.

Heat the pan, add rice, pour in 225 ml of boiling water, add salt, stir, and cover. Cook on low heat for 15 minutes. Do not open the lid or stir the rice while cooking.
- Basmati rice: 120 g
- Salt: 0.5 teaspoon

Check if there is still water in the pot after 15 minutes, and if necessary, cook for another minute. Remove the rice from the heat, let it sit for 5-10 minutes, transfer the rice to a dish, fluff it gently with a fork, and let it cool.

Heat half of the vegetable oil in a pan, fry the chopped onion until brown (3 minutes). Pour the remaining vegetable oil into the pan, heat it, add the cold rice, and fry it, stirring, for 30 seconds.
- Vegetable oil: 2 teaspoons
- Onion: 0.5 head

Evenly distribute the contents of the pan and pour in the beaten egg. Continue stirring until the egg turns into thin strips. At the end of cooking, add chopped green onions, soy sauce, mix, and it can be served.
