Fried scallops in shells

Remove the mollusks from the shells, cut them lengthwise, then in half, and rinse thoroughly in cold water three times.
- Sea scallops: 12 pieces

Soak in milk for 5 minutes, then remove, coat in flour mixed with salt and pepper, and fry in a heated pan with olive oil (6 tablespoons) until light brown.
- Milk: 1 glass

Place the prepared pieces on clean shells, add 6 more tablespoons of olive oil to the remaining oil in the pan, and sauté the finely chopped shallots.
