Vegetable skewers with tofu

Vegetable and tofu skewers are a vibrant and aromatic dish from Pan-Asian cuisine, inspired by the tradition of cooking over an open flame. The combination of tender marinated tofu with juicy vegetables infused with grill smoke creates an amazing balance of flavors. The barbecue sauce adds a light sweetness and spiciness, while sesame provides a crunchy texture. These skewers are perfect for a vegetarian picnic or friendly outdoor gatherings. They are not only delicious but also visually appealing due to the bright colors of the vegetables. The dish easily adapts to taste preferences, allowing for experimentation with marinades and spices. It can be served on its own or complemented with rice or fresh green salads, creating a harmonious and nutritious dinner.

Prepare all the ingredients. Soak the skewers in water beforehand to prevent them from burning during frying.

First, you need to squeeze the water out of the tofu so it has room to absorb the marinade. To do this, place the tofu on a dry towel, cover it with another towel, and put something heavy on top, like a cutting board and a plate. Press down gently (the key is not to overdo it and crush the tofu), then move the cheese to a dry part of the towel and repeat the same actions a few more times.
- Firm tofu: 300 g

Cut the tofu into cubes about 1.5 cm on each side.

Mix the tofu with 80 grams of barbecue sauce and let it marinate while all the vegetables are being chopped.
- Barbecue sauce: 280 g

Slice the zucchini into half-moons about 1 cm thick. If the zucchini is very small, you can slice them into rings of the same thickness.
- Zucchini: 200 g

Remove the seeds and white veins from the pepper, and cut into squares of 2-3 cm sides.
- Sweet pepper: 250 g

Chop the onion coarsely. If the mushrooms are large, cut them in half or into quarters. Leave the small ones whole.
- Red onion: 140 g
- Champignons: 150 g

Mix all the vegetables in a large bowl with oil, salt, and pepper.
- Vegetable oil: 50 ml
- Ground black pepper: to taste
- Salt: to taste

Skewer all the vegetables and tofu, alternating them.

Place the skewers on a preheated grill or barbecue and cook on all sides, brushing with the remaining barbecue sauce until nicely charred.
- Barbecue sauce: 280 g
