Prepare the products.

Cut the fillet into two pieces (to get a total of six pieces), make cuts inside or pound with a hammer.
- Turkey thigh fillet: 3 pieces

All pieces should be salted on both sides.

Crack the eggs into a bowl.

Heat 1-2 tablespoons of clarified butter in a pan.

Dip each piece of turkey in egg.

Place the pieces in the pan with heated oil.

Combine the remaining eggs and breadcrumbs (if the mixture is very thick, add 50–70 ml of water), and mix everything well until smooth.

Pour over the chops that have been fried on both sides.

Cut the tomato into rings.
